We have other molds, square and round but in 50G variety. I wanted to experiment with a smaller one, 30G with a nice mold. The construction is quite similar, but also different in some respects. These molds screw to the handle, which is a more secure fit than my other ones which latch to the moving part/handle.The design is not too intricate, which helps when you make a large batch of mooncakes. The dough will stick less, and you don’t have to clean it too frequently or dust it with lots of flour. The mold is thick enough to allow even pressure and create a nice mooncake, it is easy to take apart and clean, and the syringe type of handle helps to press and release the mooncake easily.Looking forward to our next batch of mooncakes with this new addition. For the first time users, hold mold, design side down, screw in the handle until it stops (finger tight), have your mixture divided to sizes which will fit, insert the mixture in, press on unit against flat surface only until you feel even resistance, lift and push syringe handle to release the mooncake. I’m sure that there are plenty of Yutube video with better instructions.

The unit is generally good for making pattern on moon cake or cookies. The molds have good clear lines although they look small. That is also depend on your texture of your dough as well.Spring force is good. It gives just about right feel - not to hard to push down and the amount of force it tries to push backup. The plastic casing feels strong. Time will tell. Two negative points:1. There is no instruction of how to put them together and how to make adjustment (there is a screw to adjust how deep into the dough to cut). It took me a while to figure out how to take them apart first and then where to put the long Phillip head screw in place.2. With pressing it down on flat surface and just push the stem down, it can go far and tiled to one side. This isn't effect operation of the unit as it never needs to go out that far but it does not look as well defined design.

I know these are meant for moon cakes, but I wanted to try it on my sugar cookie dough. My dough keeps the shape of the cookie when baked and I would coat them entirely in chocolate or royal icing. They're small enough for a one bite. Very cute
