So far so good, I just roasted it dark, my first roast was too dark tasted burnt. But this one has the flavor but not the holy grail for me maybe it’s in my other roasts. I have yet to try medium/dark and medium/light I roasted with these beans. I like the freshness of roasting my own cause you can achieve a variety of flavors. This is some, “Good Stuff Maynard!”

Getting coffee that's fresh enough for espresso making on Amazon is nearly impossible. The storage and transport logistics just don't allow for it--unless the roaster actually ships it themselves, chances are you're getting coffee that's been roasted months-to-years ago. The one caveat is nitrogen flushed coffee, but they tend to oxidize much faster when opened, from my experience.Roasting your own is the best way to get fresh coffee from Amazon. You can start with something as cheap as an air popcorn roaster or invest in a larger home roasting setup.The great thing about these "Castillo, Unroasted Green Coffee Beans Cielito Paradise Coffee Huila Colombia" beans is that they're a super beginner friendly bean to roast. If you take this just into the beginning of first cracks (or slightly before they start) you're going to get a nice medium-dark roast that's a crowd pleaser. It's coffee that tastes like coffee. Perfect for filter or espresso.They don't list tasting notes, but if you were to give a mug of this to a person on the street, they'd say it tastes like coffee. It's not fruity, funky, strange, or burnt, smoky, or bitter. It's a good cup of coffee, perfect for sipping throughout the day. It makes a nice espresso that has enough punch to cut through milk based drinks. I'm not a coffee professional, but I'm tasting dark chocolate, hazelnut, caramel, and vanilla. Typical washed Colombian tasting notes. This one is somewhat low on acidity, but there's enough to keep people like me (who love high acidic natural processed coffees) interested.Your roast will, of course, change the tasting notes, but most roasts just into second crack will taste like the above. It's pretty difficult to get a bad medium-dark roast out of these. You don't want to take it too light or you'll risk vegetal flavors. It stands up pretty well to darker roasts into rolling second crack, but there are far cheaper green bean options that would do the same.At over $30 for two pounds, it's difficult to justify the high price point. It's at least double what I'd pay for a similar coffee that's not through Amazon. I just checked on my go-to green coffee supplier, and I can get four pounds of a high quality washed Colombian coffee shipped to my door for the same price.The big selling point of buying green coffee through Amazon is the quick shipping. If you're in a pinch, there's nothing wrong paying a premium to have it delivered same day/overnight through Amazon. I've done it before. For that purpose, this is a five star coffee and I'd highly recommend it. Just know there are less expensive options available that have the same quality, if not better.

I’ve tried the Castillo medium roast version of this coffee from Cielito Paradise and found it to be delicious, so I was interested when I saw they offered the same coffee as a green bean ready to be roasted and I could experiment on my own. For this, I wanted to try both a lighter roast and a medium-dark roast to see how these beans would turn out. For this, I split the batch into two 1 lb batches for roasting (well close to that as there was just under 2 lbs in the bag).The beans are of a good mix of sizes and overall good quality. There are a few peaberries and a few damaged beans (e.g., cracked or scared), but for the most part these are good beans. The Q grade score of 86 seems pretty on par for my experience with this coffee bean. To roast the beans, I used a Diedrich roasting machine which has proven to give me good results in the past.For a lighter roast, I took the beans just past the first crack. They came out lightly browned and had a wonderful smell to them. The beans roasted nice and evenly with little variation, but did loose more weight than I had anticipated (maybe a little extra water?). After letting the roasted beans rest for a couple of days to off gas, I ground them up and brewed up a cup. Immediately, I could taste the sharper notes of the berry along with more complex deeper tones. This bean took very well to a light roast and had a wonderful character to it.For the medium-dark roast, I took the beans into the second crack, but not too far as I didn’t want to over roast them. Again, the beans roasted well and had good consistency. The aroma was much deeper with the darker roast, which is expected. Interestingly, with the darker roast, the beans didn’t loose that much more weight than the light roast. As the beans cooled, you could see some slight sweating of oils from the maillard reaction. Due to the darker roast, this batch of beans off gassed for longer, so I gave them an extra day before brewing up a cup of coffee. The flavor came out good, but gone were the sharper notes of the berry and the coffee had developed a softer and warmer body to it. It is not unexpected that the darker roast lost some character and complexity.Overall, I would say that this is a good quality green coffee bean that roasts well and makes a good cup of coffee. It takes well to differing levels of roasting, but I would say to appreciate it, stick with a lighter roast and don’t go past a medium roast or you risk loosing too much of the flavor profile and the specialness that this coffee has to offer.

Using a large cast iron skillet, a wooden spoon, and medium high heat, I roasted about four handfuls of the beans. It took about 15 minutes for the beans to reach the second crack. I like a darker roast but didn't want them to get too dark. I was supposed to stir constantly but at one point, I stepped away and a few burnt beans resulted, but it wasn't too bad. I let them cool and then put them into a valve bag with a zip close top that I happened to have on hand. I then let them sit overnight. I've read that at least two days should pass before using these for brewing coffee, but they smelled really good on the second day, so I went ahead and made a cup of coffee. To my surprise, it was pretty good. For my next batch I will stir more consistently. I was glad that I didn't have to buy any special equipment in order to roast these beans.
