BBQ Pitmasters will wrap their meats towards the end of the cook to protect the meat from drying out and losing moisture. Meats are also wrapped to help them speed through the stall, known as the "Texas Crutch."
The main drawback to using foil is that when hot meats are wrapped, the steam cannot escape and any bark that has formed can easily turn to mush.
Pink/Peach Paper solves this problem by allowing steam to escape, while still preserving the juices and preventing the meat from drying out.

For years I've ben using two sheets of 18" red butcher paper for wrapping my briskets because that's the way the pit masters were teaching it online.I switched over to this wider paper and couldn't be happier.Before placing the brisket on the paper I give the paper a light spray of the apple juice which I've been using to keep the brisket moist. The paper folds and wraps super easy and I get a much better wrap and seal that I did trying to use the two sheets of 18"

I struggled with the additional cost over the smaller sized paper, but honestly worth it when you think of the time invested in a brisket.

Aaron might make it look easy, but I had a hard time wrapping my briskets without some part being left exposed or dripping out all the juices. Those wonderful juices. Maybe my briskets are just huge, but I am not about to go out and tell the cows how to do their thing.Buy bigger paper, make bigger briskets, make BBQ happiness bigger.
