This pasta maker is advertised as all aluminum/steel construction. In reality, the pasta sheet cylinders have cheap plastic sprockets which fracture easily rendering the machine useless. I purchased 2 Cestari pasta makers for a family holiday event. Both units failed on first use due to fracture of the plastic sprockets.

My pasta maker arrived yesterday and was put to work right away. After a first pass here are some observations.PROS: very sturdy and the suction cup feature is great. It was one reason I chose this, since the overhang on my counter won’t accept a clamp. It was easy to use and intuitive.The rollers were good and the cutting blades did a very good job.The manual was very clear about how to balance the texture of the dough so that it goes through well.CONS: the number system on the machine is the reverse of what is in the manual. The manual lists 1 as the most open, for the thickest layer, with 9 as the thinnest layer. On my machine it is the opposite. 9 the rollers are fully open and 1 is the thinnest. Either the manual was printed wrong or the numbers were stamped wrong on the dial. I figured it out but it was a bit confusing at first. It would be good if the place to align the number were clearer....it is just a tiny bump and not easy to see. The only part of the machine I am somewhat concerned about is that dial...when you pull it out to turn it, it seems a little weak. I almost felt as though something inside could snap if I’m not careful.I wish there were more widths of cutting blades available. To have a wider blade would be useful.All in all a good product and I think I’m going to get good use out of it.

1. Item was delivered to my door less than 24 hours after ordering on Amazon Prime, and on a weekend. How does that even happen?2. Works perfectly, looks great, solidly built, a precision machine.3. The suction base is fantastic. A quick turn of the lever and it is locked to my granite counter top and won't budge until lever is released. This means I can use it anywhere in my kitchen, not just on an overhanging ledge. I believe this is the only pasta machine with this patented feature. Definitely a huge plus.4. Rolls dough to any desired thickness. Cuts linguine and thin spaghetti (well, spaghetti with square rather than round cross section) precisely and easily5 Easy clean-up---nothing sticksInsomma, questa macchina è proprio meravigliosa, funziona benissimo, e fa divertente il processo.Additional Note---for accompanying photos. I find that it almost takes three hands to roll the pasta after the dough has been rolled very thin ----one hand to support and feed the delicate sheet of dough into the rollers, one hand to crank, and one to support and guide the rolled sheet as it exits the rollers----so it does't pile up and stick together. This would be true for all hand-crank pasta machines. So I made a simple wooden platform that mounts onto the machine to support and guide the dough toward the rollers. Just lay the sheet down on the inclined platform, slide the end of the dough into the rollers, and crank away. Works perfectly.

Love this machine! Using a recipe calling for 1 2/3 cup Italian 00 flour and three medium eggs (and occasional dusting with semolina when rolling), I had success the first time. Suction mount really gripped Corian counter top -- the machine didn't budge once. The crank worked smoothly in all three positions. No uneven or jerky movements, no strange squeaks, everything worked perfectly. I'll admit to being apprehensive as I'd never attempted making fresh pasta before, but this machine worked exactly as shown in the Cestari video and churning out beautifully thin pasta was actually easy to do. The semolina kept any dough from sticking so there was really nothing to clean after use. I just brushed it over with a soft pastry brush and microfiber cloth as the manual instructs.

I absolutely love this product. I am so not a kitchen person but I had so much fun making pasta and it actually came out really well. The machine was super simple to put together and took less then a minute. I followed the directions in the book for making the dough. The recipe was good and the pasta was yummy. Just make sure your eggs are at room temperature. I was able to make enough pasta for 3 of us to eat. The directions are great - just read them a few steps ahead. I didn't and had to back track a few times. Rolling the pasta was easy - the roller just grabs the pasta and rolls it out for you and then just do that till it is the right thickness. The knob to change the thickness works well. After I let the pasta dry enough, it was more then 10 minutes but I think that might have to do with my eggs being to cold and my dough might have been too moist. Once somewhat dried I was able to cut the pasta na dI was shocked at how easy it was. There are two different styles of pasta that you can cut. I did the linguine since I had never done it before and wanted to take the easy route. My son and I did this together and we had so much fun. Also as easy as it was I know the next time will be even easier. I posted on Facebook immediately and now looking for additional dough recipes so I can try different ones. This is a great machine that is easy to use and very easy to clean. The cutting part comes off to make it easy to clean. The roller I just rolled a slight damp piece of paper towel through it and the roller were all clean. Bottom line - I love this machine and so excited that I got it so I can now make my own pasta and know what I am feeding my kids. I highly recommend it.Oh I forgot - the other cool thing is that it functions to your counter so you don't have to worry about it moving. If it does move at first just wipe the counter and the function part and it sticks really well.There are 3 videos - 1 unboxing, 1 rolling the dough and 1 cutting the dough
