I love the ease of use of these and that they collapse down and store well. You definitely need to use flour though because the dough will still stick if you don't flour them and you also need to kind of tap the dough out once you flip it over it's not like a regular rattan or bowl with a towel. It doesn't pop right out. Also at least rinse them in water right away try to wash them pretty soon because the silicone will retain smells if you leave them sitting in a dirty sink. They do wash well in the dishwasher also even in the collapsed form.

I wasn't sure what to think about a silicone banneton, but I was curious to try it. And I actually really like them! They are so easy to clean, wipe right down, and they also fold down for convenient storage. So far they've worked great! I would recommend.

I got these silicon proofing baskets to replace some older ones I had. They weren't silicon (not sure what the material is) but were always kind of a challenge to clean. These silicon baskets are thicker silicon than I was expecting. They hold their shape nicely and stand up to baking. The only issue I have is cleaning after baking them can sometimes be challenging. They have ridges that kind of hold things so you really need a good brush to scrub these clean. Other than that they make it easy to pop out the bread and give a consistent finish to the outside of the bread.

I was skeptical of using silicone proofing baskets for cold proofing high hydration sourdough. Thin silicone tends to be very flexible. It is also non porous. This could allow high hydration dough to spread laterally, and accumulate moisture while in the basket. The first time I used this was with an 80% hydration dough. While the dough did appear to spread somewhat, it did not noticeably affect the the finished loaf. Moisture does accumulate inside the basket, and it is noticeable when the dough is removed from the basket. This can be a good thing if you like to use steam in your baking process. Although, if left for a long period of time in the refrigerator which is not recommended anyway, the moisture could cause mold.The basket is significantly deeper than my single loaf rattan basket, so it may be suitable for larger loaves. Currently, I have no intention of using this as a substitute baking pan; although, I do use a silicone mat to protect the surface of my glass dutch oven at temperatures as high as 500 F. I always use a liner with my rattan basket to facilitate cleaning. This basket does not need a liner, and can be top rack dishwasher cleaned.I rated the product at 5 stars mainly on value. At the current price of about $12, it is significantly cheaper than a good quality rattan basket, and is easier to clean. However, rattan is still the best for holding shape, especially with high hydration dough.

I bought these to use in addition to my rattan ones (which started shedding after a couple uses). So far, so good, but it doesn't clean quite as easily as they say it does. I'll try another loaf and see what happens, but the flour that I lined it with turned a toasty brown, like it was burnt and trying to remove it from inside the ridges was a challenge. I was using the dobie sponge (sponge in non abrasive netting) and I was barely making a dent. Wound up using the bottle brush and my nails instead. Also it's oven safe only to 446F. I baked my loaf at 445 for 55 min, which got it to 205F inside. The bottom of the bowl is flat so unless you flip the dough over before you bake it you won't get the banneton dome on top. If you like designing the tops this would be perfect for you.
