Update to the update: I now have the santoku, paring and chef’s knife. Zero complaints. For me the standouts of the set are the utility knife and the paring knife, which seems especially sharp and has a great balance and blade profile. Loving the handles and the angled pinch area.Update: I also bought the utility knife and absolutely love it. Amazingly smooth cut for a serrated knife, sails through everything including cardboard and has stayed incredibly sharp. I’m really liking the handles and both blades continue to perform incredibly well. Once you try Sandvik steel you may never go back.I did a bit of research on this steel before buying this knife and it doesn't disappoint. Design, materials and construction are excellent. The blade profile is fairly flat and this steel is apparently particularly good for push cutting and takes a wickedly smooth-sharp edge. The blade feels really solid and strong, with a taper toward the edge but very little going down the spine, even at the tip.The actual edge on this knife is extremely well-finished and sharp, by far the smoothest at cutting paper of many I've tried, especially out of the box. All the grinds are very even and smooth; the back of the blade is comfortable to handle. Good handle, long and tapered, very solid, excellent for big hands, apparently designed so that a pinch grip at the balance point is on the angled and heavily textured top of the handle - makes for a very secure grip but different than what I’m used to. Rough texture on the beveled sides, less so on those parallel to the blade, and I assume this will mellow over time.No complaints at all. The design of the knife is great both visually and in its function and the price is excellent. Probably worth nothing that this steel, though plenty hard, doesn’t have any ring when you tap the blade; it sounds like a soft steel. I assume that’s because it doesn’t have the larger, brittle crystals found in other hard steels. In use it seems to combine the toughness of softer steels with the edge retention of harder steels.

It looks great, but cuts even better! Sharp of course, because they all are out of the box. But it keeps its edge, easy to hone, and easy to use. Feels great even after several onions and peppers and celery stalks and...
