I like Dexter knives, they have a good price and good quality. I got the santoku knife good thickness not too thick not too thin. Also purchased the chef’s knife from the same 360 series. This is the more inexpensive line I paid under $17 for each. It is not dexsteel I have some dexsteel but they have a higher carbon content making the edge a bit sharper and harder but you might get rust stains if you leave them dirty wet just thrown in the sink. These ones are more forgiving as they won’t rust as fast. The steel is softer but easy to sharpen, easy to hon and maintain. The thing with knives is if you don’t maintain the edge, just throw them in a drawer or bang them on cutting boards you will loose their effectiveness pretty fast. Your knife is your primary tool in the kitchen take care of it and keep it sharp. Good entry level knives, I prefer the dexsteel but those run $30+ per knife. And these are everyones knives anyone in the house can use them. The dexsteel ones are more of my personal knives.

I was considering a $150 knife with a fancy handle and a reputable name. But then again why do commercial institutions not use fancy knives. Because they are heavy and they are fragile. This Dexter knife, wish it had a slightly thicker blade, is light, handles extremely well, is super sharp and does what it needs to do. I am not scared of braking it or misusing it. This is my new kitchen workhorse. Next is the chef knife. I am no longer skeptical.
