Tie guan yin is a half-fermented oolong tea. If you consider tie guan yin tea by roasting level you may find two subtypes: clean aroma (qing xiang or lightly roasted), strong aroma (nong xiang or heavily roasted). Classifications associated with lightly roasted tie guan yin include production processes such as:
1: roasting occurs the morning of the 2nd day after picking tea leaves.
2: roasting occurs the afternoon-evening of the 2nd day after picking tea leaves.
3: roasting occurs the early morning of the 3rd day after picking tea leaves.
The shown is tuo suan tieguanyin tea, it has the lightest rocking process, but high fragrance and strong taste with hint of fresh sour. Good for morning wake up.
Brewing in Chinese Gongfu Way:
Serving size: 3 grams.
Water: 150ml with temperature of 95℃–100℃.
5 steeps: rinse, 15s, 25s, 35s, 45s, 55s.
Iced Tea: 3g tea with 150ml mineral water, stay for 6-8 hours in fridge you can begin to drink the tea.
